Dan and I are headed home this weekend and can't wait to meet our new little niece Amanda! Our visit is sure to be jam packed and full of fun! We'll be sure to include time for multiple trips to Cafe Rio and plenty of time with our nieces and nephews!

who doesn't love cafe rio. i've found a similar recipe for the salad... not exact, but a close second. when you haven't had it in a long time, you wouldn't even know the difference.
